Summer Smoothies

Good Morning folks! I don’t know what the weather is like where you are, but it is sweltering here in the North East – both in NY and in Boston. It was 96 yesterday and it’s supposedĀ  to get up to 98 or so today. Yikes!! On hot days like this – and really for most of the summer, I find that I can’t stomach too many hot breakfasts in the morning. In fact, I’ll usually crave something cold and filling – and a bowl of cereal will not always keep me satisfied for more than an hour and a half! Well – smoothies to the rescue! Smoothies may sound deceptively simple but you can actually pack a great deal of nutrition into a smoothie depending on your mixture of ingredients. It’s not just milk or juice, fruit and ice….

So this morning, I had a Strawberry, Blueberry, Banana Smoothie but it was more than your typical “commercial” variety. Mine had flax seeds, protein powder, a greens powder, & almond-coconut milk in it, and was topped with a sprinkling of granola, nut butter and coconut butter. Delicious, refreshing and packed with healthy carbs, protein and fats! Of course you don’t have to use a greens or protein powder – you can add a handful of spinach (you won’t taste it – promise!) or a Tbsp of of almond butter instead. I just have protein powder and a greens powder at home and wanted to use them in my smoothie.

Strawberry, Blueberry, Banana Smoothie

 

 

 

 

 

 

 

Ingredients:

1/2 frozen banana

2 large ( or 3 – 4 small) strawberries, washed & hulled

1/4 blueberries

3/4 cup almond-coconut milk (or almond or soy milk)

1/4 cup water

1 tsp flaxseed

1 Tbsp rice protein powder (optional)

1/2 Tbsp Greens powder (optional)

Toppings:

1 tsp coconut butter

1 tsp nut butter (almond, peanut, mixed nuts etc)

2 Tbsp granola

4-5 ice cubes

 

Method:

1. Combine all ingredients except blueberries, granola, nut butter and coconut butter in a blender and blend until smooth.

2. Pour into a bowl or large glass. Top with granola, blueberries, nut butter & coconut butter.

3. Enjoy!
